Pechotierra Destilado De Maguey Verde

Pechotierra is a truly small-batch producer of agave spirits from the state of Monterrey, which lies outside of the denomination of origin for mezcal, despite having a long and rich history of agave spirit production.
As a very unique practice, the master distiller substitutes water for pulque (agave beer) during the fermentation, resulting in an unmatched silky texture and rich creaminess. With each expression limited to a mere 100 liters per year, this is an agave spirit to not be missed for any real enthusiast.
The single agave varietal used here is Verde, which means "green," due to its green appearance, and creates a spirit that is both robust but soft, despite its ~50% abv. This spirit has a slight funkiness with strong umami notes.
